Recipes to Celebrate World Diabetes Day

Diabetes impacts more than 37 million Americans. Fortunately, the disease doesn’t have to dictate your day-to-day routine, especially with proper care. A huge component of diabetes is managing your blood sugar and keeping it within a healthy target range. Food plays a huge component in blood sugar levels, so we are excited to share three diabetes approved recipes from our nutrition team to help celebrate World Diabetes Day!

Cauliflower Fried Rice

Ingredients:

  • Peanut oil
  • ½ cup diced maple ham or raw shrimp, diced
  • 1 tsp grated ginger
  • 2 garlic cloves, minced
  • ½ cup diced mushrooms
  • 5 cups of grated cauliflower
  • 3 TBSP soy sauce
  • ½ tsp sesame oil
  • ½ cup chopped baby bok choy or spinach
  • 4 scallions, sliced
  • 2 eggs, well beaten

Instructions:

  • Coat a wok or skillet with a thin layer of peanut oil, heat over high heat. Toss around the ham or shrimp, ginger, garlic, and mushrooms for 1 to 2 minutes, until fragrant. 
  • Add the cauliflower and toss while stir frying for 2 to 3 minutes. 
  • Add the soy sauce, sesame oil, bok choy and scallions. Continue to toss and cook until
      cauliflower is tender.
  • Move mixture to the side of the wok. Add another teaspoon of peanut oil and add the eggs. Cook until scrambled, chop using your spatula and mix all ingredients together.
  • Season with additional soy sauce if needed.

Skinny Orange Chicken

Ingredients:

  • 1 ½ lbs chicken breast cut into 1” pieces
  • 1 TBSP peanut oil Orange Sauce
  • ½ cup Smucker’s sugar free orange preserves
  • Zest and juice of 1 large orange (about 1/3 cup)
  • ½ cup chicken broth
  • 1 TBSP Truvia
  • ¼ cup rice wine vinegar
  • 1/3 cup soy sauce
  • 2 garlic cloves, minced
  • 1 tsp Sriracha or ¼ tsp crushed red pepper flakes
  • ½ tsp freshly grated ginger
  • ¼ tsp black pepper
  • 1 TBSP cornstarch

Instructions:

  • Wisk together the preserves, orange zest & juice, broth, Truvia, vinegar, soy sauce, garlic, Sriracha, ginger, pepper and cornstarch in a small bowl and set aside.
  • Heat peanut oil in a skillet or wok. Season the chicken with salt and black pepper & sauté, stirring occasionally until the chicken is browned and nearly cooked though. 
  • Add the orange sauce and stir to combine scraping up the browned bits from pan bottom. 
  • Let the sauce come to a boil and cook for 2 to 3 minutes until thickened.

No Sugar Lemon Bars

Ingredients:

  • 1 cup almond flour
  • ¼ cup all-purpose flour
  • ¾ cup Truvia Blend natural sugar replacer
  • 6 TBSP butter
  • 3 large egg yolks plus 3 large eggs
  • Zest of 2 lemons
  • 2/3 cup lemon juice, about 3-4 lemons

Instructions:

  • Preheat oven to 350˚. Spray 9x9 inch baking pan with nonstick cooking spray.
  • Pulse the almond flour, flour, ¼ cup Truvia and 1 TBSP butter in a food processor until the mixture resembles coarse meal, 20-30 seconds. Transfer crumb to a prepared pan and press firmly with flat bottom of measuring cup into an even layer over pan bottom.
  • Bake until light golden brown 15-18 minutes.
  • While crust is baking, whisk the eggs with the remaining ½ cup Truvia in a medium sauce pan. Add the lemon zest and lemon juice, beat for an additional 1 minute. Add remaining 4 TBSP butter and cook over medium heat stirring constantly with a wooden spoon until mixture thickens to a sauce like consistency about 4-6 minutes.
  • Pour over hot crust and bake for 10-12 minutes.

Cool completely and serve.
